Alkyl glycosides (APG) are an important class of non-ionic surfactants, whose structural formula can be expressed as R-O - (CH2) n-G, where:

- R represents the alkyl chain, which is the hydrophobic part of APG molecules, typically derived from compounds such as fatty alcohols.
- N represents the carbon number of the alkyl chain, which determines the length of the alkyl chain and thus affects the physical and chemical properties and applications of APG.
- G represents the sugar group, which is the hydrophilic part of APG molecules. It is usually obtained by the hemiacetal hydroxyl group of monosaccharides or polysaccharides such as glucose and the hydroxyl group of fatty alcohols losing one molecule of water under the action of acidic catalysts.

Alkyl glycosides are products obtained through condensation reactions between sugar compounds and higher alcohols. They can be a mixture of alkyl glycosides with different degrees of polymerization, such as alkyl mono glycosides, alkyl di glycosides, and alkyl poly glycosides. These compounds have structural similarities, but their performance and application areas may differ.
Alkyl glycosides have many excellent properties, such as good biodegradability, low toxicity, mild and non irritating to the skin and eyes, and are therefore widely used in personal care products, cleaning agents, and pharmaceuticals. Meanwhile, alkyl glycosides can also be further chemically modified through reactions such as esterification and etherification to synthesize derivatives with specific properties and application value.

It should be noted that alkyl glycosides from different sources and levels of refinement may have differences in appearance, solubility, surface activity, and other aspects. For example, pure alkyl polyglycosides are generally white powders without a clear melting point, and have a wide melting range from the softening point to the flow point; However, the alkyl polyglycosides obtained in actual industrial production are mostly mixtures, with colors ranging from light to brown, and their solubility and surface activity are also affected by impurities and degree of refinement.
In summary, alkyl glycosides are a class of compounds with alkyl chains and sugar groups, with the structural formula R-O - (CH2) n-G, and have broad application prospects and potential for further development.
